Ingredients and spices that need to be Take to make Falahari Thali/ Vrat ki thali / Southern Vrat Thali:

  1. For Vrat Ka Dosa
  2. 1 cup sago washed and soaked 6 hrs
  3. 1/2 cup sama rice washed and soaked 6 hrs
  4. 1/2 cup Peanut powder
  5. 1/2 cup Curd
  6. 1 tablespoon Ginger and green chilli paste
  7. Rock salt as per taste
  8. Ghee 1 tsp per dosa
  9. For Vrat ki Chutney
  10. 1/2 cup Fresh grated coconut
  11. 1/2 cup Peanut powder
  12. Chopped green chillies 2 no
  13. Chopped coriander leaves 2 tsp
  14. 1 tsp Grated ginger
  15. 1 cup Fresh curd
  16. Salt, sugar and black pepper to taste
  17. For Spiced Makhana
  18. 2 cups Foxnut seeds or makhana
  19. 1 tablespoon ghee
  20. Cumin powder, chilli powder 1 tsp each
  21. 1 tsp Dry mango powder
  22. Rock salt, sugar powder as per taste
  23. For the Sama Rice Payasam
  24. Washed and 2 hr soaked sama rice 1/2 cup
  25. 3 cups Full cream milk
  26. Sugar as per taste
  27. Saffron 10 threads soaked in hot milk 1 tsp
  28. 2 pinch Cardamom powder
  29. 1 tablespoon Raisins
  30. 1 tablespoon Cashews broken
  31. 2 tablespoons Ghee
  32. For Vrat ka Potato Gojju or (sweet and sour curry)
  33. 3 Boiled, peeled and cubed potatoes
  34. 1 tablespoon Ghee
  35. 1 tsp Cumin seeds
  36. 1 tsp ginger and chilli paste
  37. 2 tablespoons Peanut powder
  38. 2 tsp Tamarind paste
  39. 1 tablespoon Jaggery
  40. Rock salt, chilli powder, cumin powder as per taste
  41. as needed Water
  42. Chopped coriander leaves to garnish
  43. For Lemon Pickle
  44. 10 Lemons
  45. 4 cups Sugar
  46. 1/2 cup Rock salt
  47. 1 cup Chilli powder

Instructions to make to make Falahari Thali/ Vrat ki thali / Southern Vrat Thali

  1. First,To make Vrat Ka Dosa: Soak sama and Sago after washing for 6 hrs. Then add all the other ingredients except salt. Grind to a smooth paste. Ferment for 8 hours. Add salt. Mix well for 5 minutes. Then make Dosa as we make regular dosa using ghee. They turn out really crispy.
  2. To make Chutney: Mix all the ingredients mentioned above. Chill till serving
  3. To make Potato Gojju: Pop cumin seeds in hot ghee. Then add ginger and chilli paste. Then saute the potatoes till crispy. Then add in all the other ingredients, check spices and adjust the consistency with hot water. Cover and Cook for 10 minutes and garnish with coriander leaves.
  4. To make Spiced Makhana: Slow roast the makhana with ghee on low flame till h golden brown and crispy. It should crush between fingers when pressed. Then remove from heat. Add a little extra ghee and all the seasonings. It's ready to serve with the meal as a side dish.
  5. To make Sama Rice Payasam: Saute drained sama rice in hot ghee for 5 minutes. Then add half of the milk and cream. Let it simmer on slow heat while stirring after every 2 minutes till sama turns soft Add sugar, rest of the milk, cardamom and saffron milk. Mix well. Cook on low heat for further 5 to 8 minutes till Payasam is thick. Shallow fry the nuts in 1 tsp ghee. Add to the Payasam. It's ready.
  6. To make Sweet and SpiceyLemon Pickle: Wash, dry and cut lemons in cubes. Take a bowl and mix all the ingredients mentioned. Keep for 2 hours in a cool and dark place. Grind to a coarse paste. Fill in dry, cleaned glass jar and close the lid tight. Keep in sun for 2 to 3 weeks till you have a dark syrupy Pickle ready. It is shown in the pic in earthen pot.
  7. To Serve, arrange all the dishes in a thali. Serve on Vrat day and enjoy with your family! Happy fasting!
